Refrigerator Casserole

“Hey, Grandpa… What’s fer Supper!” Oh, I know I am dating myself when I use a line from television of days gone by.  This quote, of course, is from the Grandpa Jones long running skit on Hee Haw.   If you look at the linked example of the skit, all I can say is… you had to be there… back when we only had three channels. When apparently things did not have to be funny to be funny.  I can just hear him saying refrigerator casserole. And then describe what is in it. Back on Topic At any rate, I seem to have…

Roasted Apples & Pears with Caramel Sauce

Our “holiday interrupted” was rescheduled for this weekend to eat up all the food we couldn’t make due to the kidney stone situation.  So we headed for the beach on Saturday afternoon and hung out with the sisters and get a quick dinner out after all the prep work for the Sunday barbecue was complete.  But dessert was back at the house, and I was making it.  We were also about to watch a movie; so I wanted simple and easy. And since I am an undisciplined Baker it could not require chemistry.  This was perfect. These roasted apples & pears took five…

I Failed But It’s OK

I am not a baker. Precisely following a recipe is beyond challenging for me. I am adding just a little more of this or that because in my head it seems like it should work. The operative word here is “seems” because when baking, it usually bites me in the tuchus.  When I was thirteen or fourteen, one year for Christmas I told my mom that I would make all the Christmas cookies and she let me.  The problem was I made up every recipe, and the only one that was edible had a primary ingredient of  Raisin Bran cereal.  Imagine…

Pineapple & Coconut: What is Not to Love

A Piña Colada Pie My sister made this pineapple and coconut delight a few weeks back, and I knew then I have to make it for Saturday Dinner Club.  It is the perfect summer dessert, and although there are several “cooling periods” in this process, it is a relatively easy pie to make.  You may want to make two pies. Trust me when I say that you will want leftovers to nibble on after the party is over. Ingredients 21 pecan shortbread cookies, crumbled in food processor 1 cup sweetened flaked coconut 1/4 cup + 1 tablespoon melted butter 1/3 cup sugar…

Bread Pudding: Oh, I am a Bad Boy!

I was going to write this post for tomorrow, but when I woke up this morning, I saw today is National Donut Day.  So I got busy and posted it today. Ok, now I bet you are confused.  The title says bread pudding but you had to post because it’s National Donut Day?  What gives?   Krispy Kreme Bread Pudding.  That is what gives. Now before you get to the recipe, you must know that bread pudding is one of my all-time favorite desserts.  As such, I have rules about what makes this dessert “to die for” versus “to die from.”…

Salted Caramel Butter Bars

I have been craving something sweet, but Gary asked that I not buy anything at the bakery.  So I didn’t, I made something.  This recipe first appeared on my Facebook feed.  I love salted caramel so, I went to the website and decided I had to give it a try.  Thanks Cookies & Cups for sharing this recipe with the world. Salted Caramel Butter Bars INGREDIENTS For the Crust: 1 lb. salted butter room temp 1 cup sugar 1½ cups powdered sugar 2 Tbs vanilla 4 cups AP flour For the Filling: (I did not use this portion of the…
