Roasted Grapes: Who Woulda Thought?

I was shooting a wedding a couple weeks ago and along with the accompaniments for the salad station was a bowl of what looked like red seedless grapes that lost its luster.  So I popped one in my mouth and was overcome by pure delight.  Roasted grapes – who knew!  I knew it was a grape but the flavor is more intense. It tastes nothing like a fresh grape but it is so so good.  My mind started racing about what one could do with these delectable morsels of goodness.  All I can say is, I never would have thought to roast grapes and when I learned how simple it is to do… I stopped and bought grapes on my way home from the wedding.

 

Roasted Grapes

This is the simplest recipe.

NOTE:  While I roasted both red and white seedless grapes, I prefer the red grape.  The flavor it more intense and so they hold up better against the foods they are used with.  For the purposes of this post you will see images showing both red and white grapes.

NOTE:  The amount of grapes used depends on what you are doing with them and for how many people.roasted grapes

PREPARATION

Pre-heat your oven to 350º.  Place your grapes in a large enough bowl to easily manipulate them while covered in water.   Wash in cold water.  While sitting in the water pull the grapes from the bunch. Once all the grapes are off stem, swirl around in the water to remove any debris.  Pour off water.  Sprinkle a generous amount of sugar onto the grapes.  The sugar should stick to the skin of the grapes.  The actual amount of sugar is a personal preference.  Are you making for a dessert or for something savory.

Place the grapes on a sheet pan.  Make sure they are spread out and have not all rolled close together.  Bake for 15-20 minutes or until they are soft to the touch or you can see that the skins have split.  The larger your grapes the longer it may take.   When cooked, carefully remove the grapes from the sheet pan and into a bowl and let cool.  Wah La!  You are done.

Now what should you do with them.

  • I just eat out of the bowl.
  • Put some in with Kefir or Yogurt
  • Top a wheel of baked brie and serve with a baguette
  • Place in your salad
  • It is also really good with most any cheese – make up an appetizer
  • Drizzle over pound cake
  • Pour over ice cream

UPDATE: Cauliflower Cheesy Bread updated (get pdf here)  I made it again and did not use parchment paper. Folks liked the caramelized cheesy taste from the crispier crust.  You can print out the updated recipe here.

UPDATE: Minted Lemonade.  Instead of mint I added 2 cups of dried tart cherries.  FYI –  It must steep for at least 24 hours. When the lemonade is  gone you have reconstituted cherries to eat. YUM.  And the Lemonade is so good.
